Appetizing Ensaladang Talong
In this recipe, I’m going to teach you another one of my favorite recipes. Ensaladang Talong or eggplant salad is a vegetarian recipe that could be a main-course dish when served with rice. Usually however, it is a side dish for grilled meat or fish.
Anyone can make Ensaladang Talong as it is easy to prepare, the only cooking required is the grilling of eggplants. Once the eggplants are grilled, the flesh is removed using a fork and then seasoned with patis or bagoong and vinegar. Chopped onions and tomatoes are also added in this recipe.

Ingredients:
- 5 medium-sized eggplants
- 2 tomatoes
- 1 red onion
- 1/2 tsp. patis or fish Sauce
- 3 tbsp. white vinegar
- Salt & pepper to taste
Direction:
Grill the eggplant until soft and the outer skin is gaining a charcoaled color.
Once the eggplant is cooked, let it cool and then peel the skin off.
Lightly scrape the eggplant flesh with a fork. Set aside.
Thinly slice the tomatoes and onion and put it in a bowl.
Add the vinegar and patis.
Add the eggplant and mix all ingredients together.
Add salt and pepper to taste.

If you are not in the mood to fire up the grill, you can boil the eggplants instead. Until next time!
