2 pieces Ampalaya, cut in half, seeded and sliced into 1/4″ crosswise pieces
1 Tomato, sliced
1 cup Vegetable or chicken broth
2 Whole Eggs, scrambled
2 garlic cloves, minced
1 medium red onion, diced
1 tbsp. Fish Sauce
Salt and pepper to taste
1.) Saute the garlic, onion and tomatoes in a pan for a minute.
2.) Add the ampalaya and fish sauce.
3.) Pour vegetable or chicken broth and cover to let it boil until there is little broth left.
4.) After 5-10 minutes, lower the heat.
5.) Season with salt and pepper.
6.) Pour the beaten eggs on top and do NOT stir yet. Let it cook for a minute.
7.) Once cooked, stir the ampalaya and egg.
8.) Serve with rice.
