Nutty Sans Rival

small3Sans Rival is a nutty cake made of layered butter cream, meringue, and cashew nuts. If you are living in France or just happen to understand French, then I assure you this dessert’s name, which means ‘without rival’, truly lives up to its name! This recipe does have a French origin and has its roots from the layered dessert cake Dacquiose.


Sans Rival is a challenging recipe since it takes patience and efforts to perfect but my craving for this delicious cake always wins out and I’m back in the kitchen whipping up another one before I know it!


What I love most about this cake is its texture. It has a mix of soft and crunchy quality, thanks to the layers of cashew nuts, butter cream and meringue, that just makes me want to have one more bite!  Try out Sans Rival and let me know what you think.








  • 1 cup all-purpose flour
  • 1 cup chopped cashew nuts
  • 1 teaspoon cream of tartar
  • 1 cup egg whites
  • 1 cup sugar




  • 1 cup butter
  • 1 teaspoon cream of tartar
  • 8 pieces egg yolks
  • 1 cup of water
  • 1 cup white sugar


For baking:


  • 3 8×12 inches baking pans
  • Aluminum foil




Prepare three baking pans measuring about 8”x12”.


Line the baking pans with aluminum foil with the glossy side down.


Set the baking pans aside.


Next is the meringue layer.


Beat the egg whites in a bowl. Add the cream of tartar and mix until it turns frothy.


Add white sugar. Mix until stiff.


Put in the flour and cashews and spread the ingredients evenly.


Place the mixture in the baking pans and spread evenly.


Put in the oven and bake at 300 degrees Fahrenheit for 50 minutes.


When done, set it aside and let it cool.


Next is the Buttercream Filling.


Mix water, white sugar, and cream of tartar.


Cook and leave syrup for a while.


Beat egg yolks until it thickens.  Add in syrup and let it chill in the fridge.


Cream the butter until fluffy. Add chilled egg yolks with butter and mix everything thoroughly.


Now, time to prepare!


Line a plate with a layer of meringue.


Remove the aluminum foil.


Spread buttercream filling onto the meringue layer.


Garnish with chopped cashew nuts.

Alternate meringue layer, buttercream filling, and garnishing.


Top everything with buttercream filling and more nuts.


Put it in the freezer until frozen.
